Coconuts

Have you ever cut open a coconut? Holy moly, that is a lot of work!! I had no idea. This morning I was all set to make myself a tofu-Pina-Colada shake when I put the knife to the coconut and… nothing. That knife wasn’t going to cut through that thing if I kept at it for days. So, I headed back downstairs to look up how to open a coconut online and found out that this was no easy task and that I’d be busy a while doing so. I scrapped the Pina Colada and went for raspberry/blueberry combo instead.

When Rob came home for lunch he said, “What’s with the coconuts?” I told him my ordeal from the morning and that we’d need a hammer and nails and who knows what else to open this thing. He told me to hang on a second and went to the garage, coming back with a hammer and screwdriver and set to work. Apparently he used to do this all the time when he was stationed in Cuba. He broke those puppies open in pretty good time, but little did I know I had another 1/2 hour of work, not to mention injuries, ahead of me. Getting the skin off of each piece of the meat was an arduous task, but I feel like I got my arm workout in for the day. All’s well that ends well, I guess – I’ve got a huge container of coconut pieces in the freezer awaiting their shake fate.

And once I’m done recovering, I’ll head back up to the kitchen to make myself some lunch. I think I’m going to go with something quick and easy.

Vacation

It’s Sunday night at 11:24pm and I’m not thinking to myself, “Shit, I’ve got to get to bed. I have to get up in the morning!” Instead, I’m thinking, “Dude! I don’t have to go to work tomorrow. Or the next day. Or the day after that. Or the day after that, either! Hee!!” Yeah, we might not be going to Virginia Beach like we usually do the last week of August :::sob::: but at least I don’t have to go to work.

On the agenda for tomorrow: meetings, manicure, pedicure and waxing at the salon and then cleaning the house. Exciting stuff, people! Holy hell, I just realizing it’s been a MONTH since I got my nails done. They don’t look that bad, either. I mean, they don’t look great… but I was sitting here wondering if it had been 2 weeks or 3 since my last visit. It pays to get those light, neutral colors. My eyebrows are another story entirely. I don’t know if I’m just imagining it, but I can actually feel the extra hairs there when it’s been a while since I’ve had them waxed. When that happens, I usually do some plucking on my own, but I don’t want to get too overzealous with that because last time, my eyebrow lady let me know I had messed them up and we had to let them grow back in so she could fix them. Oops!

Here’s to the last week before the school year and new television season and fall (as we know it) begins!

I asked Rob to send me the pics he took with his cellphone yesterday and while I was in the middle of picking the ones I wanted to use, he sends me a link to his blog where he had already posted them! Ha! He also uploaded a video to YouTube of the boys doing the BungeeRun – they had a blast doing that. Last night was a good time at the Festival of Lights – I’m glad we live close enough to my parents to go to things like this.

Here’s what we’re doing tonight – the Festival of Lights in Burlington, NJ. In case anyone wants to stalk me. Ha! We went to this a few years ago and it’s a really nice time. Vendors are outside with fun and food and then at dusk, the boats do a parade of lights followed by fireworks. Too bad it’s not nicer outside. It’s been cloudy all day and probably didn’t get much past 75. I’ve been in jeans!

Columbus Mart

We went to a big flea market near my parents’ house today – the Columbus Mart in NJ. I hadn’t been there in years and years … and let me tell you, it will probably be years and years before we go back! Yuck. Maybe I’m just getting too old for stuff like that, but I just felt like everything was old and dirty and yucky and there was not a lot there worth spending my money on. Well, we did get a few things – hand lotion and a “Turkish” carpet runner. I’ll have to post pictures of that later. Actually, my mom got it for us for Christmas, so it might be way later before the pictures. Heh.

So now we’re headed to the commissary at McGuire/Ft. Dix to go grocery shopping. I haven’t been there in a long time, either. Woo – exciting Saturday!
